Instructions
- Preheat the oven to 425°F (218°C).
- Cut horizontal slits into each potato.
- Combine melted butter, olive oil, minced garlic, salt, cayenne pepper, and black pepper in a bowl.
- Toss the potatoes with the garlic mixture to coat them well.
- Place the potatoes in a roasting pan.
- Roast for 15 minutes, then turn them over and baste with the garlic oil.
- Continue roasting for another 15 to 20 minutes.
- Garnish with parsley and serve immediately.
