Garlic Roasted Potatoes

Ingredients

The potatoes

  • 1 lb baby potatoes

The seasoning

  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic
  • 1 pinch salt
  • 1 pinch cayenne pepper
  • 3 dashes ground black pepper
  • 1 tablespoon chopped parsley

Instructions

  1. Preheat the oven to 425°F (218°C).
  2. Cut horizontal slits into each potato.
  3. Combine melted butter, olive oil, minced garlic, salt, cayenne pepper, and black pepper in a bowl.
  4. Toss the potatoes with the garlic mixture to coat them well.
  5. Place the potatoes in a roasting pan.
  6. Roast for 15 minutes, then turn them over and baste with the garlic oil.
  7. Continue roasting for another 15 to 20 minutes.
  8. Garnish with parsley and serve immediately.
