Ingredients

The potatoes

  • 1 lb baby potatoes

The vegetables

  • ¼ onion sliced
  • ¼ small green bell pepper, sliced
  • ¼ small red bell pepper, sliced

The seasonings

  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • 3 dashes ground black pepper
  • 1 tablespoon chopped parsley

Instructions

  1. Preheat the oven to 400°F (207°C).
  2. Clean and rinse the baby potatoes, then pat them dry.
  3. Heat olive oil in a skillet and add onion, green bell pepper, and red bell pepper; cook for 30 seconds.
  4. Add the baby potatoes, salt, and ground black pepper, stirring to mix well.
  5. Cover the potatoes with aluminum foil and roast in the oven for 30 minutes.
  6. Remove from the oven, top with chopped parsley, and serve immediately.
