Instructions
- Preheat the oven to 400°F (207°C).
- Clean and rinse the baby potatoes, then pat them dry.
- Heat olive oil in a skillet and add onion, green bell pepper, and red bell pepper; cook for 30 seconds.
- Add the baby potatoes, salt, and ground black pepper, stirring to mix well.
- Cover the potatoes with aluminum foil and roast in the oven for 30 minutes.
- Remove from the oven, top with chopped parsley, and serve immediately.
