Roasted Garlic Parmesan Potatoes

Ingredients

The potatoes

  • 1 ½ pounds baby potatoes

The seasoning and sauce

  • ¼ cup butter
  • 1 tablespoon minced garlic
  • 1 tablespoon fresh chopped rosemary
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • ¾ cup freshly grated parmesan cheese

For garnish

  • to taste fresh parsley or chives
  • to taste crushed red pepper flakes

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Wash the potatoes and cut them in halves or quarters based on their size.
  3. Arrange the cut potatoes on the baking sheet.
  4. Melt the butter in a small saucepan and add garlic, rosemary, salt, and pepper; cook for 1 minute.
  5. Pour the butter mixture over the potatoes and toss to coat.
  6. Bake the potatoes for 30 minutes, then toss with parmesan cheese.
  7. Cook for an additional 5 to 10 minutes until the potatoes are tender.
  8. Sprinkle with fresh herbs and additional parmesan if desired.
