Parmesan Roasted Potatoes

Ingredients

  • pounds baby potatoes
  • ¼ cup olive oil
  • 2 tablespoons butter
  • 3 heads garlic
  • ½ tablespoon parsley leaves
  • ½ lemon cut into wedges
  • 2-3 sprigs thyme
  • ¼ teaspoon salt
  • ½ teaspoon cracked black pepper
  • cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 350°F (176°C).
  2. Cut slits into the potatoes without cutting all the way through.
  3. Place the potatoes in a roasting pan and brush them with olive oil and melted butter.
  4. Add garlic, parsley, lemon, and thyme between the potatoes.
  5. Sprinkle with salt and black pepper.
  6. Roast the potatoes for 1 hour, basting with the oil mixture at 30-minute intervals.
  7. After 1 hour, sprinkle Parmesan cheese over the potatoes.
  8. Turn off the oven and leave the potatoes inside for 5-10 minutes until the cheese melts.
  9. Serve immediately.
