Greek Lemon Potatoes

Instructions
- Preheat the oven to 400°F (204°C).
- Mix the potato wedges with lemon juice, olive oil, chicken broth, parsley, garlic powder, oregano, salt, and pepper in a large bowl.
- Transfer the seasoned potatoes to a baking dish and pour any remaining liquid over them.
- Roast in the oven for 25 minutes.
- Remove the potatoes, toss them carefully, and increase the oven temperature to 425°F (218°C).
- Continue roasting until the liquid evaporates and the potatoes are crispy.
- Season with additional salt and pepper to taste and serve with fresh parsley.
