Greek Lemon Potatoes

Ingredients

The potatoes

  • lb Yukon gold potatoes

The seasoning mixture

  • 6 tbsp Lemon juice
  • ¼ cup Extra virgin olive oil
  • ¼ cup Chicken broth
  • ¼ cup Fresh parsley
  • ¾ tsp Garlic powder
  • 1 tsp Dried oregano
  • ½ tsp Sea salt
  • ¼ tsp Black pepper

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Mix the potato wedges with lemon juice, olive oil, chicken broth, parsley, garlic powder, oregano, salt, and pepper in a large bowl.
  3. Transfer the seasoned potatoes to a baking dish and pour any remaining liquid over them.
  4. Roast in the oven for 25 minutes.
  5. Remove the potatoes, toss them carefully, and increase the oven temperature to 425°F (218°C).
  6. Continue roasting until the liquid evaporates and the potatoes are crispy.
  7. Season with additional salt and pepper to taste and serve with fresh parsley.
