Instructions
- Preheat the oven to 400°F.
- Line a baking sheet with parchment or grease it with olive oil.
- In a large mixing bowl, combine lemon juice, olive oil, mustard, salt, oregano, and garlic.
- Add the potato wedges to the bowl and toss to coat well.
- Transfer the potatoes to the prepared baking sheet.
- Bake for 55 minutes at 400°F.
- Serve in a bowl or sharing plate.
