Ingredients

The Potatoes

  • 7 large russet potatoes or red-skin potatoes

The Marinade

  • 3-4 juices lemons
  • 5 tbsp olive oil
  • ¼ cup yellow mustard
  • to taste good quality salt
  • 2-3 tbsp dried oregano
  • 1 tbsp garlic powder or 4 garlic cloves

Instructions

  1. Preheat the oven to 400°F.
  2. Line a baking sheet with parchment or grease it with olive oil.
  3. In a large mixing bowl, combine lemon juice, olive oil, mustard, salt, oregano, and garlic.
  4. Add the potato wedges to the bowl and toss to coat well.
  5. Transfer the potatoes to the prepared baking sheet.
  6. Bake for 55 minutes at 400°F.
  7. Serve in a bowl or sharing plate.
