Greek Roasted Potatoes

Ingredients

The potatoes

  • 3 pounds baking potatoes, peeled and cut into wedges

The seasoning

  • ½ cup olive oil
  • 4 cloves garlic, minced
  • teaspoons dried oregano
  • 1 teaspoon salt
  • to taste freshly ground black pepper
  • ½ cup chicken broth or vegetable stock
  • cup lemon juice, freshly squeezed
  • 2-3 tablespoons minced fresh oregano

Instructions

  1. Preheat the oven to 400°F.
  2. Place the potatoes in a baking dish and pour olive oil over them.
  3. Add garlic, dried oregano, salt, and pepper, then toss to coat.
  4. Arrange the potato wedges in a single layer.
  5. Bake for 15 minutes.
  6. Add the chicken broth, toss, and bake for another 10 minutes.
  7. Add lemon juice, toss, and bake for an additional 10 to 15 minutes until cooked through.
  8. Optionally, broil for 2 to 3 minutes until golden brown.
  9. Sprinkle with fresh oregano and serve.
