Lemon Greek Potatoes

Instructions
- Preheat the oven to 425°F.
- Cover a baking sheet with aluminum foil and spray it with nonstick cooking spray.
- Scrub the potatoes and cut them into 8 wedges each.
- Place the potato wedges on the prepared baking sheet.
- Whisk together the olive oil, garlic, lemon zest and juice, salt, pepper, water, and oregano.
- Drizzle the mixture over the potatoes and toss gently to combine.
- Bake the potatoes for 1 hour and 20 minutes, stirring every 20 minutes, until crispy and golden brown.
- Serve immediately, optionally with tzatziki or feta and dill dressing.
