Lemon Greek Potatoes

Ingredients

The potatoes

  • 5 medium Russet potatoes

The dressing

  • ¼ cup extra virgin olive oil
  • 3 cloves garlic
  • 1 lemon zest and juice
  • teaspoons kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ¾ cup water
  • 2 teaspoons chopped fresh oregano

Instructions

  1. Preheat the oven to 425°F.
  2. Cover a baking sheet with aluminum foil and spray it with nonstick cooking spray.
  3. Scrub the potatoes and cut them into 8 wedges each.
  4. Place the potato wedges on the prepared baking sheet.
  5. Whisk together the olive oil, garlic, lemon zest and juice, salt, pepper, water, and oregano.
  6. Drizzle the mixture over the potatoes and toss gently to combine.
  7. Bake the potatoes for 1 hour and 20 minutes, stirring every 20 minutes, until crispy and golden brown.
  8. Serve immediately, optionally with tzatziki or feta and dill dressing.
