Ingredients

The potatoes

  • 2 pounds potatoes

The seasoning

  • ¼ cup lemon juice
  • Drizzle olive oil or broth
  • 2 teaspoons Greek oregano
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper

Optional for softer potatoes

  • 1 cup veggie broth

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the potatoes into 8 or 16 pieces for even cooking.
  3. Place the potato wedges in a baking dish and drizzle with lemon juice and olive oil or broth.
  4. Add oregano, salt, and pepper, and toss to coat the potatoes.
  5. Bake for 45-50 minutes until the edges are brown and the potatoes are tender.
