Oven Roasted Potatoes

Ingredients

The potatoes

  • 2 pounds baby potatoes

The oil

  • 2 tablespoons avocado oil

The seasonings

  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • 6-8 cloves garlic (optional, unpeeled)
  • a few sprigs fresh thyme or rosemary (optional)

Instructions

  1. Preheat the oven to 425ºF.
  2. Rinse and scrub the potatoes, then pat them dry and cut them into quarters or halves.
  3. In a large bowl, combine the potatoes with avocado oil, black pepper, and garlic powder, and toss to coat.
  4. If desired, add unpeeled garlic cloves and fresh herbs for extra flavor.
  5. Arrange the potatoes cut side down on a baking sheet coated with cooking spray.
  6. Roast for 20 minutes until the bottoms are brown and crispy.
  7. Turn the potatoes with a spatula and continue roasting for another 10-20 minutes until crispy outside and soft inside.
  8. Sprinkle sea salt over the top before serving.
