Oven Roasted Potatoes

Instructions
- Preheat the oven to 425ºF.
- Rinse and scrub the potatoes, then pat them dry and cut them into quarters or halves.
- In a large bowl, combine the potatoes with avocado oil, black pepper, and garlic powder, and toss to coat.
- If desired, add unpeeled garlic cloves and fresh herbs for extra flavor.
- Arrange the potatoes cut side down on a baking sheet coated with cooking spray.
- Roast for 20 minutes until the bottoms are brown and crispy.
- Turn the potatoes with a spatula and continue roasting for another 10-20 minutes until crispy outside and soft inside.
- Sprinkle sea salt over the top before serving.
