Skillet Breakfast Potatoes

Ingredients

The potatoes

  • 5 small Russet Potatoes

The frying

  • ¼ cup Olive Oil
  • 1½ - 2 tsp Herb Seasoning

Instructions

  1. Preheat the oven to 400°F.
  2. Rinse and scrub the potatoes, then pierce each potato several times with a fork.
  3. Bake the potatoes for 35 minutes.
  4. Remove from the oven and allow to cool for 30 minutes, then chill overnight.
  5. Dice the chilled potatoes into ½" cubes.
  6. Heat olive oil in a large non-stick skillet over medium heat.
  7. Once hot, add the diced potatoes and sprinkle with herb seasoning, then toss to coat.
  8. Cover the pan and cook, stirring every few minutes, until the potatoes are lightly browned and tender, about 8-12 minutes.
  9. Serve immediately.
