Instructions
- Preheat the oven to 400°F.
- Rinse and scrub the potatoes, then pierce each potato several times with a fork.
- Bake the potatoes for 35 minutes.
- Remove from the oven and allow to cool for 30 minutes, then chill overnight.
- Dice the chilled potatoes into ½" cubes.
- Heat olive oil in a large non-stick skillet over medium heat.
- Once hot, add the diced potatoes and sprinkle with herb seasoning, then toss to coat.
- Cover the pan and cook, stirring every few minutes, until the potatoes are lightly browned and tender, about 8-12 minutes.
- Serve immediately.
