Ingredients

The base

  • 1 lb potatoes, cut into small cubes
  • 2 bell peppers, diced
  • 1 onion, diced
  • 2 tbsp avocado oil
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 1 tsp black pepper

The protein

  • 2 lbs ground chorizo

The garnish

  • 1 lime
  • 2 avocados, sliced
  • ¼ cup cilantro, chopped (optional for garnish)
  • 8 eggs (optional)

Instructions

  1. Preheat the oven to 400°F and line a sheet pan with parchment paper.
  2. Chop the potatoes, bell peppers, and onion, then place them in a bowl.
  3. Add avocado oil and toss to coat, then add chili powder, garlic powder, sea salt, and black pepper, and toss again.
  4. Spread the veggies on the sheet pan and break the ground chorizo into small pieces, distributing them evenly among the veggies.
  5. Bake in the oven for 30-40 minutes until the potatoes are tender.
  6. Squeeze lime juice over the dish and top with sliced avocados and optional cilantro.
  7. Serve with eggs cooked to your liking if desired.
