Instructions
- Preheat the oven to 400°F and line a sheet pan with parchment paper.
- Chop the potatoes, bell peppers, and onion, then place them in a bowl.
- Add avocado oil and toss to coat, then add chili powder, garlic powder, sea salt, and black pepper, and toss again.
- Spread the veggies on the sheet pan and break the ground chorizo into small pieces, distributing them evenly among the veggies.
- Bake in the oven for 30-40 minutes until the potatoes are tender.
- Squeeze lime juice over the dish and top with sliced avocados and optional cilantro.
- Serve with eggs cooked to your liking if desired.
