Southwest Chorizo Breakfast Casserole

Ingredients

  • 1 lb ground chorizo
  • 2 plantains, peeled and diced
  • 1 bell pepper, diced
  • ½ onion, diced
  • 12 eggs
  • a pinch salt and pepper
  • 2 avocados, sliced
  • ½ cup salsa
  • 2 tbsp avocado oil

Instructions

  1. Preheat oven to 375°F and grease a 9x13 baking pan with oil.
  2. In a skillet, cook the chorizo over medium heat until browned and crispy, about 8-10 minutes.
  3. While the chorizo cooks, prepare the plantains, bell pepper, and onion.
  4. Remove the cooked chorizo from the pan and set aside.
  5. In the same pan, add the plantains, bell pepper, and onion. Cook for about 5 minutes until softened.
  6. In a bowl, whisk together the eggs, salt, and pepper until frothy.
  7. Layer the plantains, bell pepper, and onion in the baking pan, followed by the chorizo, and then pour the egg mixture on top.
  8. Bake in the oven for 30 minutes until the eggs are cooked.
  9. Serve topped with sliced avocado and salsa.
