Southwest Chorizo Breakfast Casserole

Instructions
- Preheat oven to 375°F and grease a 9x13 baking pan with oil.
- In a skillet, cook the chorizo over medium heat until browned and crispy, about 8-10 minutes.
- While the chorizo cooks, prepare the plantains, bell pepper, and onion.
- Remove the cooked chorizo from the pan and set aside.
- In the same pan, add the plantains, bell pepper, and onion. Cook for about 5 minutes until softened.
- In a bowl, whisk together the eggs, salt, and pepper until frothy.
- Layer the plantains, bell pepper, and onion in the baking pan, followed by the chorizo, and then pour the egg mixture on top.
- Bake in the oven for 30 minutes until the eggs are cooked.
- Serve topped with sliced avocado and salsa.
