Easy Breakfast Scramble

deli meat, chopped (turkey or ham)

shredded cheddar cheese or cheese of choice

Instructions
- Dice the potato, deli meat, and tomatoes.
- Heat the oil over medium heat and add the potatoes, cooking until almost brown (about 5-7 minutes).
- Add the deli meat and cook for an additional 2-3 minutes.
- Push the deli meat and potatoes to the side of the skillet and pour in the beaten eggs.
- Scramble the eggs, slowly incorporating the potatoes and deli meat.
- Once the eggs are still a little runny, add the tomatoes and cook for 1-2 more minutes before removing from heat.
- Sprinkle cheese on top and mix in if desired, then enjoy!
