Easy Breakfast Scramble

Ingredients

  • 8 eggs beaten
  • 1 large potato, peeled and diced
  • 2 Roma tomatoes diced and seeds removed
  • lb deli meat, chopped (turkey or ham)
  • ¾ cup shredded cheddar cheese or cheese of choice
  • 2 tsp avocado oil
  • to taste salt
  • to taste pepper

Instructions

  1. Dice the potato, deli meat, and tomatoes.
  2. Heat the oil over medium heat and add the potatoes, cooking until almost brown (about 5-7 minutes).
  3. Add the deli meat and cook for an additional 2-3 minutes.
  4. Push the deli meat and potatoes to the side of the skillet and pour in the beaten eggs.
  5. Scramble the eggs, slowly incorporating the potatoes and deli meat.
  6. Once the eggs are still a little runny, add the tomatoes and cook for 1-2 more minutes before removing from heat.
  7. Sprinkle cheese on top and mix in if desired, then enjoy!
