Vegetable Breakfast Scrambles

Ingredients

  • ½ Tbsp butter
  • ½ bell pepper diced
  • 2 cups spinach
  • 2 large eggs
  • to taste N/A seasoning of choice
  • 6 pieces grape tomatoes, sliced in half
  • ¼ avocado sliced
  • ¼ cup hummus
  • pinch N/A salt and pepper

Instructions

  1. Heat butter in a large non-stick skillet over medium heat.
  2. Add diced bell pepper and sauté for 1-2 minutes.
  3. Add spinach and sauté until wilted, about 1 minute.
  4. Push vegetables to the sides and crack eggs in the center, adding seasoning.
  5. Scramble the eggs with the vegetables until mostly set.
  6. Remove from heat and transfer to a bowl.
  7. Top with sliced tomatoes, avocado, hummus, and a pinch of salt and pepper.
  8. Serve immediately.
