Instructions
- Heat butter in a large non-stick skillet over medium heat.
- Add diced bell pepper and sauté for 1-2 minutes.
- Add spinach and sauté until wilted, about 1 minute.
- Push vegetables to the sides and crack eggs in the center, adding seasoning.
- Scramble the eggs with the vegetables until mostly set.
- Remove from heat and transfer to a bowl.
- Top with sliced tomatoes, avocado, hummus, and a pinch of salt and pepper.
- Serve immediately.
