Cheesy Breakfast Skillet

Ingredients

The base

  • 4 cups potatoes, washed and cut into cubes
  • ½ cup red onions, diced
  • ½ cup sweet peppers, diced
  • ½ cup grape tomatoes or diced tomatoes

The proteins

  • 4 ounces bacon, cooked and diced
  • 4 ounces chorizo (or your favorite sausage), crumbled
  • 8 large eggs

The cheese and garnish

  • 4 ounces Cabot Cheddar (or your favorite type), shredded
  • 1 tablespoon parsley, finely chopped for garnish

Seasoning

  • to taste sea salt
  • to taste black pepper

Instructions

  1. Preheat the oven to 450°F.
  2. Mix the diced potatoes with olive oil, salt, and pepper, then spread on a parchment-lined baking sheet and roast for 20 minutes.
  3. In a frying pan, cook the diced bacon and chorizo until done, draining excess grease.
  4. Sauté the onions and peppers in a tablespoon of the grease for about 2 minutes.
  5. Combine the roasted potatoes with the cooked meats, onions, and peppers on the baking sheet.
  6. Top the mixture with shredded cheese and parsley, then return to the oven for 2-3 minutes until the cheese melts.
  7. Transfer the mixture to a cast iron skillet, making wells for the eggs.
  8. Crack an egg into each well, season with salt and pepper, and sprinkle with parsley.
  9. Broil the skillet for 3-5 minutes until the egg whites are set.
  10. Serve immediately.
