Cheesy Breakfast Skillet

Instructions
- Preheat the oven to 450°F.
- Mix the diced potatoes with olive oil, salt, and pepper, then spread on a parchment-lined baking sheet and roast for 20 minutes.
- In a frying pan, cook the diced bacon and chorizo until done, draining excess grease.
- Sauté the onions and peppers in a tablespoon of the grease for about 2 minutes.
- Combine the roasted potatoes with the cooked meats, onions, and peppers on the baking sheet.
- Top the mixture with shredded cheese and parsley, then return to the oven for 2-3 minutes until the cheese melts.
- Transfer the mixture to a cast iron skillet, making wells for the eggs.
- Crack an egg into each well, season with salt and pepper, and sprinkle with parsley.
- Broil the skillet for 3-5 minutes until the egg whites are set.
- Serve immediately.
