Coastal Breakfast Skillet

Instructions
- Cook the chopped bacon in a skillet over medium heat until crispy, about 10-15 minutes.
- Remove the bacon and drain on paper towels, reserving 1 tablespoon of bacon grease.
- Add diced potatoes and onion to the skillet and cook until golden brown, about 10 minutes.
- Remove the potatoes and onions, then add shrimp and tomatoes to the skillet and cook for 1.5 minutes.
- Reduce heat and crack eggs into the skillet without stirring, cooking until the whites are almost set.
- Spoon the bacon, potatoes, onions, shrimp, and tomatoes around the eggs.
- Season with salt and pepper, sprinkle cheese on top, and let sit for 1 minute.
- Garnish with avocado, cilantro, and green onions before serving.
