Egg Breakfast Skillet

Ingredients

The skillet

  • 3 large eggs
  • 2-3 tbsp diced tomato
  • 2-3 tbsp diced green pepper
  • pinch salt
  • pinch pepper
  • 2-3 tbsp crumbled feta cheese
  • 1 tbsp chili crunch oil
  • 1 tbsp fresh dill
  • 1-2 tbsp pickled onions

The base

  • ¾ cup cooked grain of choice (brown rice, quinoa, etc.)

For cooking

  • 1 tbsp olive oil

Instructions

  1. Heat a frying pan to medium-high and coat with olive oil.
  2. Crack the eggs into the pan and add diced tomatoes, green pepper, salt, and pepper.
  3. Reduce heat to medium-low and cook for 3-4 minutes.
  4. Sprinkle crumbled feta and chili crunch oil over the eggs and cook until desired doneness.
  5. Remove from heat and scoop cooked grains onto a plate.
  6. Slide the eggs onto the grains and top with fresh dill and pickled onions.
