Baked Eggs with Bacon, Spinach, & Goat Cheese

Instructions
- Preheat the oven to 400°F.
- Cook the bacon in a skillet or oven until crispy, then drain on paper towels.
- Grease 4 ramekins with bacon drippings and reserve 1 tablespoon of drippings.
- In the same skillet, heat the reserved drippings over medium heat and add spinach, stirring until wilted.
- Whisk together the apple cider vinegar and mustard, then add to the wilted spinach, seasoning with salt and pepper.
- Crack an egg into each ramekin, then divide the spinach mixture and crumbled bacon among them.
- Place the ramekins on a baking sheet and bake for 10-15 minutes until the whites are set and yolks are runny.
- Remove from the oven, season with salt and pepper, and top with crumbled goat cheese.
- Serve immediately with toasted baguette slices.
