Ingredients

The main ingredients

  • 4 pieces eggs
  • 6 slices applewood smoked bacon
  • 4 cups baby spinach
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon coarsely ground mustard
  • 2 ounces goat cheese, crumbled
  • to taste salt and freshly ground black pepper

For serving

  • as needed toasted baguette slices

Instructions

  1. Preheat the oven to 400°F.
  2. Cook the bacon in a skillet or oven until crispy, then drain on paper towels.
  3. Grease 4 ramekins with bacon drippings and reserve 1 tablespoon of drippings.
  4. In the same skillet, heat the reserved drippings over medium heat and add spinach, stirring until wilted.
  5. Whisk together the apple cider vinegar and mustard, then add to the wilted spinach, seasoning with salt and pepper.
  6. Crack an egg into each ramekin, then divide the spinach mixture and crumbled bacon among them.
  7. Place the ramekins on a baking sheet and bake for 10-15 minutes until the whites are set and yolks are runny.
  8. Remove from the oven, season with salt and pepper, and top with crumbled goat cheese.
  9. Serve immediately with toasted baguette slices.
