Ham and Cheese Egg Cups

Ingredients

  • 9 oz thinly sliced deli ham
  • 6 large eggs
  • 2 large egg whites
  • ¼ cup skim milk
  • ¼ teaspoon salt
  • teaspoon pepper
  • ½ cup chopped fresh spinach leaves
  • 2 oz shredded 2% sharp cheddar cheese

Instructions

  1. Preheat the oven to 350°F.
  2. Mist 12 cups in a muffin tin with cooking spray.
  3. Press a slice of ham into each muffin cup to form a cup.
  4. Chop the remaining ham and set aside.
  5. In a bowl, whisk together the eggs, egg whites, milk, salt, and pepper.
  6. Add the chopped ham, spinach, and half of the shredded cheese to the egg mixture and stir.
  7. Spoon the egg mixture into the ham cups and top with the remaining cheese.
  8. Bake for 18-20 minutes until the eggs are set.
