Ham and Cheese Egg Cups

Instructions
- Preheat the oven to 350°F.
- Mist 12 cups in a muffin tin with cooking spray.
- Press a slice of ham into each muffin cup to form a cup.
- Chop the remaining ham and set aside.
- In a bowl, whisk together the eggs, egg whites, milk, salt, and pepper.
- Add the chopped ham, spinach, and half of the shredded cheese to the egg mixture and stir.
- Spoon the egg mixture into the ham cups and top with the remaining cheese.
- Bake for 18-20 minutes until the eggs are set.
