Ham, Egg, and Cheese Brunch Cups

Ingredients

The cheese sauce

  • 2 tablespoons butter
  • 2 tablespoons Baker’s Corner All-Purpose Flour
  • 1 cup milk
  • ¾ cup shredded Swiss cheese
  • ¼ teaspoon salt

The brunch cups

  • 2 sheets puff pastry
  • 18 pieces SimplyNature Organic Cage Free Brown Eggs
  • 1–2 cups Appleton Farms Spiral Sliced Half Ham, diced
  • 1 beaten SimplyNature Organic Cage Free Brown Egg (egg wash)
  • to taste chopped fresh chives
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 375°F.
  2. Melt the butter in a saucepan, add flour, and whisk together.
  3. Gradually add milk while whisking until the mixture thickens, then stir in cheese and salt.
  4. Roll out puff pastry and cut into squares; line muffin tin with pastry squares.
  5. Fill each pastry cup with cheese sauce, crack an egg on top, and sprinkle with diced ham.
  6. Brush pastry edges with egg wash.
  7. Bake for 10-15 minutes until eggs are set; garnish with chives, salt, and pepper.
