Ingredients

The egg mixture

  • 8 large eggs
  • ¼ cup whole milk
  • ¾ cup frozen peppers and onions (chopped)
  • 1 tsp garlic powder
  • salt to taste
  • pepper to taste

The filling

  • 12 pieces Applegate Black Forest Ham
  • 3 slices Applegate Cheddar Cheese

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, whisk together the eggs, milk, peppers, onions, garlic powder, salt, and pepper until well combined.
  3. Coat a 12-cup muffin pan with cooking spray and place one slice of ham in each cup.
  4. Cut each slice of cheddar cheese into quarters and place one piece in the center of each ham slice.
  5. Pour the egg mixture evenly into the muffin cups, filling each about ¾ full.
  6. Optionally, place a cheese square on top of the egg mixture.
  7. Bake in the oven for 14 minutes or until the eggs are fully cooked.
  8. Remove from the oven and allow to cool slightly before serving. Store leftovers in the refrigerator for up to a week.
