Instructions
- Preheat the oven to 400°F.
- In a large bowl, whisk together the eggs, milk, peppers, onions, garlic powder, salt, and pepper until well combined.
- Coat a 12-cup muffin pan with cooking spray and place one slice of ham in each cup.
- Cut each slice of cheddar cheese into quarters and place one piece in the center of each ham slice.
- Pour the egg mixture evenly into the muffin cups, filling each about ¾ full.
- Optionally, place a cheese square on top of the egg mixture.
- Bake in the oven for 14 minutes or until the eggs are fully cooked.
- Remove from the oven and allow to cool slightly before serving. Store leftovers in the refrigerator for up to a week.
