Canadian Bacon Egg Cups

Instructions
- Preheat the oven to 350°F and grease a muffin tin.
- In a sauté pan, heat non-stick spray and cook the onions and peppers for 4-5 minutes until soft, then add garlic for an additional minute.
- In a large bowl, whisk together the eggs, egg whites, salt, and pepper.
- In the muffin tin, place two slices of Canadian bacon in each cup, halfway up the sides.
- Pour the egg mixture into each cup until full (about ¼ cup).
- Add 2 tablespoons of the cooked peppers and onions into each egg cup and sprinkle with cheese.
- Bake for 30 minutes and let cool before serving.
