Canadian Bacon Egg Cups

Ingredients

The egg mixture

  • 4 whole eggs
  • 2 cups egg whites
  • ½ teaspoon salt
  • ½ teaspoon pepper

The vegetables

  • ½ cup yellow onion, diced
  • ½ cup green pepper, diced
  • 2 cloves garlic, minced

The base

  • 20 slices Canadian bacon

The topping

  • cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F and grease a muffin tin.
  2. In a sauté pan, heat non-stick spray and cook the onions and peppers for 4-5 minutes until soft, then add garlic for an additional minute.
  3. In a large bowl, whisk together the eggs, egg whites, salt, and pepper.
  4. In the muffin tin, place two slices of Canadian bacon in each cup, halfway up the sides.
  5. Pour the egg mixture into each cup until full (about ¼ cup).
  6. Add 2 tablespoons of the cooked peppers and onions into each egg cup and sprinkle with cheese.
  7. Bake for 30 minutes and let cool before serving.
