Bacon, Egg & Cheese Biscuit Cups

Ingredients

The filling

  • 4 slices center cut bacon
  • 3 large eggs
  • 3 tablespoons skim milk
  • Salt & black pepper to taste

The base

  • 7.5 oz Refrigerated Biscuit Dough (10 biscuits)

The cheese

  • cup reduced fat 2% shredded cheddar

Instructions

  1. Preheat the oven to 400°F and lightly mist a muffin tin with cooking spray.
  2. Cook the bacon in a skillet for 7-9 minutes until done, then chop into small pieces.
  3. In a bowl, whisk together the eggs, milk, salt, and pepper.
  4. Roll each biscuit into a larger circle and place in the muffin tin, pressing the dough into the bottom and up the sides.
  5. Divide the cheese evenly among the cups, then pour the egg mixture into each cup.
  6. Top with the chopped bacon and bake for 10-12 minutes until biscuits are golden brown and eggs are set.
