Bacon Wrapped Egg Cups

Ingredients

  • 12 strips bacon
  • 12 large eggs
  • to taste ground black pepper

Instructions

  1. Preheat the oven to 400ºF and spray a nonstick muffin tin with cooking spray.
  2. Use one strip of bacon per muffin to create a basket, covering the sides completely.
  3. Place the bacon in the oven for about 7 minutes to firm it up, but not until crispy.
  4. Crack one egg into each bacon basket.
  5. Bake for an additional 10-15 minutes depending on desired yolk firmness.
  6. Season with pepper and enjoy.
