Strata with Ham and Cheese

Ingredients

The custard

  • 8 large eggs
  • 2 cups whole milk
  • ½ cup heavy cream
  • 1 Tbsp dijon mustard
  • ½ tsp red pepper flakes (optional)
  • to taste salt
  • to taste black pepper

The vegetables

  • 2 Tbsp butter
  • cups chopped yellow onion
  • cups chopped red bell pepper
  • 6 oz. spinach (about 6 cups packed)
  • 3 Tbsp chopped parsley

The base

  • 2 cups chopped ham
  • 12 oz. hearty Italian bread (or French bread), cut into ¾-inch cubes (about 8 cups)
  • cups sharp white cheddar

Instructions

  1. Prepare a 13 by 9-inch baking dish with non-stick cooking spray.
  2. In a bowl, whisk together the eggs, milk, cream, dijon mustard, red pepper flakes, salt, and pepper; set aside.
  3. Melt butter in a skillet over medium-high heat, then add onion and bell pepper, sautéing until golden brown and tender.
  4. Add spinach to the skillet and sauté until wilted, then remove from heat.
  5. Mix in ham and parsley with the sautéed vegetables.
  6. Layer half of the bread in the baking dish, followed by half of the vegetable mixture and half of the cheese.
  7. Repeat the layering process with the remaining bread, vegetables, and cheese.
  8. Whisk the egg mixture again and pour it evenly over the strata.
  9. Press down to submerge the ingredients in the egg mixture.
  10. Cover and refrigerate for at least 1 hour or overnight.
  11. Preheat the oven to 350 degrees Fahrenheit.
  12. Bake the strata until the center is set, about 50 to 60 minutes.
  13. Allow to rest for a few minutes before slicing and serving warm.
