Breakfast Strata with Ham

Ingredients

The base

  • 12 ounces gluten-free bread rolls or crusty gluten-free bread
  • 8 ounces bacon or smoked uncured ham
  • 1 teaspoon minced garlic
  • 1 small yellow onion
  • 3 to 4 cups baby spinach
  • pinch kosher salt
  • ½ cup sun-dried tomatoes (optional)
  • 1 ½ cups shredded gouda, parmesan, or non-dairy cheese

The custard

  • 8 large eggs
  • cup heavy cream or half and half
  • 1 ⅓ cups dairy-free milk
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon dry mustard
  • ½ teaspoon dried oregano or thyme
  • ¼ teaspoon smoked paprika

Instructions

  1. Preheat the oven and grease a casserole dish.
  2. Tear or cut the bread into pieces and spread them in the dish.
  3. Cook the bacon or ham and place it on top of the bread.
  4. Sauté garlic and onion, then add spinach until wilted.
  5. Layer the sautéed veggies over the bread and meat, then sprinkle cheese on top.
  6. Whisk together the custard ingredients and pour over the layered mixture.
  7. Cover and refrigerate for at least 30 minutes or overnight.
  8. Bake uncovered, then loosely cover and continue baking until golden and set.
  9. Let rest before serving and garnish if desired.
