Ingredients

The base

  • 6 cups cubed bread
  • 8 large eggs
  • 1 ½ cups milk
  • ½ cup plain Greek yogurt
  • cup cream cheese
  • 1 tsp Dijon mustard
  • 1 tsp kosher salt
  • Freshly ground black pepper
  • 1 ¼ cups shredded cheddar cheese

The vegetables

  • 1 tbsp extra virgin olive oil
  • 1 large onion
  • 2 crowns broccoli
  • 8 oz mushrooms
  • 1 cup grape tomatoes

For serving

  • Hot sauce

Instructions

  1. Prepare a 9x13 inch baking dish with cooking spray.
  2. Heat olive oil in a skillet and sauté diced onion with a pinch of salt until softened.
  3. Add broccoli and mushrooms to the skillet and sauté for an additional 7 minutes.
  4. Stir in halved grape tomatoes and sauté for 3 more minutes, then drain excess liquid.
  5. In a mixing bowl, whisk together eggs, milk, yogurt, cream cheese, Dijon mustard, salt, and pepper.
  6. Mix in 1 cup of cheddar cheese, then add the bread cubes and sautéed vegetables, combining well.
  7. Transfer the mixture to the prepared baking dish and flatten it out.
  8. Cover with plastic wrap and refrigerate overnight or for at least 8 hours.
  9. Preheat the oven to 350°F and let the dish warm up for a bit before baking.
  10. Bake for 55 minutes, then sprinkle with remaining cheddar cheese and bake for an additional 5 minutes until set.
  11. Allow to cool for 10 minutes before serving with hot sauce.
