Instructions
- Prepare a 9x13 inch baking dish with cooking spray.
- Heat olive oil in a skillet and sauté diced onion with a pinch of salt until softened.
- Add broccoli and mushrooms to the skillet and sauté for an additional 7 minutes.
- Stir in halved grape tomatoes and sauté for 3 more minutes, then drain excess liquid.
- In a mixing bowl, whisk together eggs, milk, yogurt, cream cheese, Dijon mustard, salt, and pepper.
- Mix in 1 cup of cheddar cheese, then add the bread cubes and sautéed vegetables, combining well.
- Transfer the mixture to the prepared baking dish and flatten it out.
- Cover with plastic wrap and refrigerate overnight or for at least 8 hours.
- Preheat the oven to 350°F and let the dish warm up for a bit before baking.
- Bake for 55 minutes, then sprinkle with remaining cheddar cheese and bake for an additional 5 minutes until set.
- Allow to cool for 10 minutes before serving with hot sauce.
