Breakfast Strata

Instructions
- Preheat the oven to 400°F.
- Cut the bread into ¾ inch cubes and toast in the oven for 10 minutes.
- If using bacon, spread it on a foil-lined baking sheet and bake for 20 minutes until crisp, then cut into small pieces.
- In a skillet, heat oil and sauté the onions until golden and tender, about 10 minutes.
- In another skillet, melt butter and cook the mushrooms until tender, then add thyme, salt, and pepper.
- Combine the caramelized onions with the mushroom mixture and set aside.
- In a bowl, whisk together the eggs, milk, sour cream, salt, and pepper.
- In a large bowl, mix the toasted bread with the mushroom-onion mixture, bacon (if using), grated cheese, and ⅔ of the goat cheese.
- Pour in the egg mixture and stir gently; let it stand for 5 minutes.
- Transfer to a greased baking dish, cover with foil, and bake for 35 minutes.
- Uncover, lower the heat to 375°F, and bake for an additional 20-30 minutes until puffed and golden.
- During the last 10 minutes, scatter the remaining goat cheese on top to melt.
- Garnish with thyme sprigs before serving.
