Breakfast Strata

Ingredients

The base

  • 1 loaf crusty sourdough or french bread, about 8 cups cubed
  • 10 large eggs
  • 1 ½ cups whole milk (or half and half)
  • 1 cup sour cream
  • 1 teaspoon salt
  • ½ teaspoon pepper

The filling

  • 4–5 slices bacon (optional)
  • 1 tablespoon oil
  • 1 onion very thinly sliced into rings
  • 1–2 tablespoons butter
  • 1 pound mushrooms sliced
  • 3 tablespoons fresh thyme leaves
  • 4–6 ounces goat cheese
  • 1 ½ cups grated cheese (gruyere, jack, or mozzarella)

For garnish

  • thyme sprigs for garnish

Instructions

  1. Preheat the oven to 400°F.
  2. Cut the bread into ¾ inch cubes and toast in the oven for 10 minutes.
  3. If using bacon, spread it on a foil-lined baking sheet and bake for 20 minutes until crisp, then cut into small pieces.
  4. In a skillet, heat oil and sauté the onions until golden and tender, about 10 minutes.
  5. In another skillet, melt butter and cook the mushrooms until tender, then add thyme, salt, and pepper.
  6. Combine the caramelized onions with the mushroom mixture and set aside.
  7. In a bowl, whisk together the eggs, milk, sour cream, salt, and pepper.
  8. In a large bowl, mix the toasted bread with the mushroom-onion mixture, bacon (if using), grated cheese, and ⅔ of the goat cheese.
  9. Pour in the egg mixture and stir gently; let it stand for 5 minutes.
  10. Transfer to a greased baking dish, cover with foil, and bake for 35 minutes.
  11. Uncover, lower the heat to 375°F, and bake for an additional 20-30 minutes until puffed and golden.
  12. During the last 10 minutes, scatter the remaining goat cheese on top to melt.
  13. Garnish with thyme sprigs before serving.
