Classic Breakfast Strata

Instructions
- Cook the breakfast sausage in a skillet until partially cooked, then remove from heat.
- Sauté the onion in the sausage drippings for 8-10 minutes, then add mushrooms and olive oil, cooking for another 5 minutes.
- Add garlic and spinach to the pan and cook until fragrant and wilted.
- Whisk together eggs, heavy cream, and milk in a large bowl.
- Spray a casserole dish with non-stick spray, add ripped bread, and mix in cooked vegetables, sausage, cheddar, salt, and pepper.
- Pour the egg mixture over the bread and toss, pressing down with a spatula.
- Cover and refrigerate overnight.
- Preheat the oven to 350ºF, then loosen the strata and cover it before baking for 30 minutes.
- Uncover and bake for an additional 30 minutes, then add remaining cheese and bake for 10 more minutes.
- Let the strata rest for 10 minutes before slicing and serving.
