Instructions
- Preheat the oven to 350ºF.
- In a large bowl, whisk together the eggs, milk, and salt.
- Shred the zucchini, summer squash, and broccoli using a food processor.
- Cut the bread into ½-inch cubes and add it to the egg mixture.
- Add the shredded vegetables, finely chopped garlic scapes, and herbs to the bowl and mix well.
- Butter a 9x13-inch baking dish and pour the mixture into it.
- Cover with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 40 to 50 minutes.
- Let the strata rest for 10 minutes before serving.
