Summer Vegetable Strata

Ingredients

The base

  • 10 eggs eggs
  • 2 ½ cups whole milk
  • 2 teaspoons kosher salt
  • 13 oz bread

The vegetables and cheese

  • 1 zucchini
  • 1 summer squash
  • 1 very small head broccoli
  • 8 oz cheddar or gruyère cheese

The herbs and extras

  • herbs (parsley, basil, cilantro)
  • garlic scapes (if available)

Instructions

  1. Preheat the oven to 350ºF.
  2. In a large bowl, whisk together the eggs, milk, and salt.
  3. Shred the zucchini, summer squash, and broccoli using a food processor.
  4. Cut the bread into ½-inch cubes and add it to the egg mixture.
  5. Add the shredded vegetables, finely chopped garlic scapes, and herbs to the bowl and mix well.
  6. Butter a 9x13-inch baking dish and pour the mixture into it.
  7. Cover with foil and bake for 20 minutes.
  8. Remove the foil and bake for an additional 40 to 50 minutes.
  9. Let the strata rest for 10 minutes before serving.
