Ingredients

  • lbs. root vegetables of choice (e.g., parsnips, rutabagas, beets, carrots, sweet potatoes)
  • Tbsp. avocado oil or oil of choice
  • 3 cloves garlic, pressed or finely minced
  • to taste salt and black pepper

Instructions

  1. Preheat the oven to 425°F.
  2. Line a large baking sheet with parchment paper.
  3. Wash, peel, and dry your chosen vegetables, then cut them into similar-sized pieces, about ¼-inch thick.
  4. Place the vegetables on the baking sheet and toss with oil.
  5. Sprinkle the minced garlic over the vegetables, arrange them in a single layer, and season with salt.
  6. Roast in the oven for 15 minutes, then turn the fries so the cooked sides are facing up.
  7. Return to the oven and roast for an additional 10-15 minutes until tender and crispy.
  8. Sprinkle with additional salt and black pepper to taste before serving.
