Garlic Roasted Root Vegetable Fries

root vegetables of choice (e.g., parsnips, rutabagas, beets, carrots, sweet potatoes)

Instructions
- Preheat the oven to 425°F.
- Line a large baking sheet with parchment paper.
- Wash, peel, and dry your chosen vegetables, then cut them into similar-sized pieces, about ¼-inch thick.
- Place the vegetables on the baking sheet and toss with oil.
- Sprinkle the minced garlic over the vegetables, arrange them in a single layer, and season with salt.
- Roast in the oven for 15 minutes, then turn the fries so the cooked sides are facing up.
- Return to the oven and roast for an additional 10-15 minutes until tender and crispy.
- Sprinkle with additional salt and black pepper to taste before serving.
