Instructions
- Heat oil in a medium Dutch oven over medium heat and cook onions until golden brown.
- Stir in beans and bay leaf, cooking until beans soften; season with salt and mash until smooth.
- Combine tomato, red onion, cilantro, jalapeño, and lime juice in a bowl; season with salt.
- Broil the cut sides of rolls after buttering them until melted, then spread refried beans and cheese on top.
- Broil until cheese is melted, then top with a fried egg, pico de gallo, avocado, and pickled onion.
