Ingredients

The tostadas

  • 4 pieces corn tortillas (6-inch)
  • 1 tablespoon olive oil
  • ½ small red onion
  • ¼ teaspoon kosher salt
  • 1 can reduced-sodium black beans (15 ounces), rinsed and drained
  • cup prepared salsa

Optional toppings

  • to taste diced avocado
  • to taste diced red onion
  • to taste sliced cabbage
  • to taste shredded cheese (e.g., queso fresco)
  • to taste sour cream or plain Greek yogurt
  • to taste salsa
  • to taste diced tomatoes
  • to taste jalapeño slices
  • to taste fresh cilantro
  • to taste freshly squeezed lime juice

Instructions

  1. Preheat the oven to 400°F.
  2. In a medium saucepan, heat olive oil over medium-high heat, then add diced onion and salt, cooking until softened.
  3. Stir in black beans and salsa, cooking until heated through, then mash the mixture and set aside.
  4. Spread the tortillas on a baking sheet and bake until crisp, flipping halfway through.
  5. Spoon the black bean mixture over the crisp tortillas and add desired toppings before serving.
