Ingredients

The filling

  • 2 cans black beans
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ¼ teaspoon cayenne pepper
  • to taste salt
  • to taste olive oil
  • 3–4 tomatoes
  • 1 medium avocado
  • 2 cups shredded lettuce

The sauce

  • cup plain yogurt
  • ½ cup packed cilantro leaves
  • 3 cloves garlic
  • 1 teaspoon salt

The base

  • 4–6 flour tortillas

Instructions

  1. Preheat the broiler.
  2. Puree black beans, chili powder, cumin, and cayenne in a blender, adding oil or water as needed.
  3. In another blender, puree cilantro, yogurt, garlic, and salt, adjusting seasoning to taste.
  4. Place tortillas in the oven on the rack and bake for 3-5 minutes until crispy.
  5. Top crispy tortillas with black beans, tomatoes, avocado, and lettuce, then drizzle with cilantro sauce.
