Ingredients

The Tostadas

  • 6 pieces corn tortillas
  • to taste none avocado oil or olive oil
  • to taste none kosher salt
  • 1 cup refried beans
  • to taste none guacamole
  • 1 cup shredded cheddar or Mexican blend cheese
  • 2 cups shredded rotisserie chicken

Optional Toppings

  • to taste none shredded lettuce
  • to taste none pico de gallo
  • to taste none salsa
  • to taste none sour cream or plain Greek yogurt
  • to taste none queso fresco
  • to taste none cilantro
  • to taste none jalapeño slices
  • to taste none creamy cilantro lime dressing
  • to taste none hot sauce

Instructions

  1. Preheat the oven to 425°F.
  2. Brush or spray both sides of each tortilla with oil and sprinkle with salt.
  3. Arrange the tortillas in a single layer on a baking sheet and bake for 4 minutes.
  4. Flip the tortillas and bake for an additional 4 to 8 minutes until crispy.
  5. Heat the refried beans and spread a spoonful over each tostada shell.
  6. Add a layer of guacamole on top of the beans.
  7. Sprinkle cheese and add shredded chicken on each tostada.
  8. Top with desired toppings and serve.
