Ingredients

The tostadas

  • 8 pieces corn tortillas
  • 1 tablespoon extra-virgin olive oil
  • 2 cups refried beans
  • ½ cup grated sharp cheddar cheese
  • 8 pieces eggs
  • 2 cups pico de gallo

Optional garnishes

  • to taste hot sauce or salsa
  • to taste avocado
  • to taste crumbled Cotijah or feta cheese

Instructions

  1. Preheat the oven to 400°F and prepare baking sheets with parchment paper.
  2. Brush both sides of each tortilla with olive oil and arrange them on the baking sheets.
  3. Bake the tortillas for 10 to 12 minutes, turning halfway, until golden and crisp.
  4. Meanwhile, warm the refried beans, prepare the pico de gallo, and cook the eggs to your liking.
  5. Spread warm refried beans on each tostada, sprinkle with cheese, add the eggs, and top with pico de gallo.
  6. Add any optional garnishes and serve immediately.
