Instructions
- Preheat the oven to 400°F and prepare baking sheets with parchment paper.
- Brush both sides of each tortilla with olive oil and arrange them on the baking sheets.
- Bake the tortillas for 10 to 12 minutes, turning halfway, until golden and crisp.
- Meanwhile, warm the refried beans, prepare the pico de gallo, and cook the eggs to your liking.
- Spread warm refried beans on each tostada, sprinkle with cheese, add the eggs, and top with pico de gallo.
- Add any optional garnishes and serve immediately.
