Ingredients

The tostadas

  • 2 pieces brown rice tortillas
  • to taste salt
  • to taste pepper
  • to taste garlic powder
  • to taste tablespoons olive oil
  • 2 large eggs

The toppings (optional)

  • to taste salsa
  • to taste red onion
  • to taste kale
  • to taste radish
  • to taste sour cream
  • to taste cheese
  • to taste avocado slices or guacamole
  • to taste hot sauce

Instructions

  1. Preheat the oven to 400°F (204°C) and place tortillas on a baking sheet.
  2. Brush both sides of the tortillas with olive oil and sprinkle with salt, pepper, and garlic powder.
  3. If the tortillas are too large, cut them into smaller circles and bake the scraps as chips.
  4. Bake for 5-10 minutes until brown and crispy, watching closely.
  5. Cook the eggs as desired and set aside.
  6. Remove tostadas from the oven and top with eggs and desired toppings.
