Instructions
- Heat avocado oil in a large skillet.
- Add diced potatoes and cover for 5 minutes to steam.
- Stir occasionally until potatoes soften.
- Remove the lid, add onion and bell pepper, and brown the mixture.
- Once cooked, transfer the mixture to a plate and add olive oil to the skillet.
- Reduce heat and add whisked eggs, folding in spinach until cooked to preference.
- Warm tortillas in a skillet, then fill with egg mixture, potatoes, and hot sauce.
