Gluten Free Breakfast Tacos

Ingredients

The filling

  • 2 cups Diced Potatoes
  • ¼ cup Onion
  • ¼ cup Yellow or Red Bell Pepper
  • 1 cup Spinach
  • 7 large Eggs
  • to taste Salt and Pepper
  • to taste Hot Sauce

The cooking oil

  • 2 tbsp Avocado Oil
  • 2 tsp Olive Oil

The tortillas

  • as needed Grain Free Tortillas

Instructions

  1. Heat avocado oil in a large skillet.
  2. Add diced potatoes and cover for 5 minutes to steam.
  3. Stir occasionally until potatoes soften.
  4. Remove the lid, add onion and bell pepper, and brown the mixture.
  5. Once cooked, transfer the mixture to a plate and add olive oil to the skillet.
  6. Reduce heat and add whisked eggs, folding in spinach until cooked to preference.
  7. Warm tortillas in a skillet, then fill with egg mixture, potatoes, and hot sauce.
