Breakfast Tacos

Ingredients

The filling

  • 6 pieces bacon
  • 3 medium red potatoes, diced
  • 1 medium shallot, minced
  • ¼ teaspoon kosher salt
  • ¼ teaspoon red pepper flakes
  • 2 cloves garlic, minced

The tacos

  • 4 large eggs
  • 4 pieces tortillas (flour or corn)

The toppings

  • 2 ounces cotija cheese or queso blanco, crumbled
  • 1 medium avocado, sliced
  • 2 pieces radishes, thinly sliced
  • to taste hot sauce
  • to taste cilantro leaves

Instructions

  1. Fry the bacon until golden brown, then remove and chop into small pieces.
  2. In the same pan, cook the diced potatoes with shallot, salt, red pepper flakes, and garlic until tender, then mix in the bacon.
  3. Fry the eggs in olive oil until crispy on the bottom.
  4. Assemble the tacos by adding potato filling to each tortilla, topping with a fried egg, cotija cheese, avocado, radishes, hot sauce, and cilantro.
