Ingredients

The filling

  • 6 slices Bacon
  • 1 cup Cheddar Cheese or Mexican Cheese Blend
  • 1 large Eggs
  • 1/3 cup Pico De Gallo
  • 1 medium Avocado

The tortillas

  • 6 pieces Corn Tortillas

Optional sides

  • 2 cups Crispy Crown Hash Browns

Instructions

  1. Whisk together the eggs and set aside.
  2. Start cooking the hash browns if using.
  3. Dice the bacon and cook it in a cold pan over medium heat until crispy.
  4. Scramble the eggs in a separate pan and add cheese if desired.
  5. Remove the bacon and keep the eggs warm.
