Ingredients

The base ingredients

  • tablespoons butter
  • tablespoons oil
  • 5–6 small corn tortillas, cut into strips
  • 1 unit jalapeño, minced
  • 1 clove garlic, minced
  • 5 units eggs, beaten
  • ½ cup shredded Pepperjack or other cheese
  • ½ cup chopped cilantro
  • to taste unit salt

For serving

  • as needed unit black beans
  • as needed unit Cotija cheese
  • to taste unit salt
  • to taste unit pepper
  • as needed unit avocado
  • as needed unit tomato salsa

Instructions

  1. Heat the oil and butter in a large skillet over medium heat.
  2. Add the tortilla strips and fry until very browned and crispy.
  3. Lower the heat and add the minced jalapeño and garlic, cooking for a minute or two.
  4. Add the beaten eggs gradually, stirring gently until they are almost fully cooked.
  5. Season with salt and remove from heat, allowing the residual heat to finish cooking the eggs.
  6. Stir in the cheese and cilantro, and serve with black beans, avocado, salsa, and any other desired toppings.
