Instructions
- Heat the oil and butter in a large skillet over medium heat.
- Add the tortilla strips and fry until very browned and crispy.
- Lower the heat and add the minced jalapeño and garlic, cooking for a minute or two.
- Add the beaten eggs gradually, stirring gently until they are almost fully cooked.
- Season with salt and remove from heat, allowing the residual heat to finish cooking the eggs.
- Stir in the cheese and cilantro, and serve with black beans, avocado, salsa, and any other desired toppings.
