Ingredients

The base

  • 5 eggs beaten eggs
  • ¼ cup crumbled tortilla chips
  • ½ cup shredded Monterey Jack cheese

The vegetables

  • ¼ cup diced red onion
  • 2 pieces roma tomatoes, cored and diced
  • ½ to 1 piece jalapeño, seeded and diced
  • 1 clove garlic, finely chopped
  • ¼ cup chopped cilantro

For serving

  • 4 pieces tortillas, charred
  • to taste avocado slices
  • to taste lime wedges
  • to taste salsa or tomatillo salsa

Seasoning

  • to taste sea salt
  • to taste freshly ground black pepper
  • 1 teaspoon extra-virgin olive oil

Instructions

  1. Heat olive oil in a nonstick skillet over medium heat.
  2. Add onion, tomato, jalapeño, garlic, salt, and pepper, and cook for 2 minutes until softened.
  3. Add the beaten eggs and crumbled tortilla chips, and stir to scramble.
  4. Fold in the cheese and remove from heat.
  5. Sprinkle with cilantro, adjust seasoning, and serve with tortillas, avocado, lime, and salsa.
