Instructions
- Heat olive oil in a nonstick skillet over medium heat.
- Add onion, tomato, jalapeño, garlic, salt, and pepper, and cook for 2 minutes until softened.
- Add the beaten eggs and crumbled tortilla chips, and stir to scramble.
- Fold in the cheese and remove from heat.
- Sprinkle with cilantro, adjust seasoning, and serve with tortillas, avocado, lime, and salsa.
