Green Chile Migas

Ingredients

  • 6 pieces corn tortillas
  • ½ Tbsp cooking oil
  • 2 Tbsp butter
  • 8 large eggs
  • 1 4oz. can diced green chiles
  • ¼ cup sour cream
  • 2 oz. queso fresco or Monterey jack cheese
  • 2 pieces green onions
  • 1 pinch salt & pepper

Instructions

  1. Preheat the oven to 400ºF.
  2. Cut the tortillas into wedges and coat them with cooking oil.
  3. Spread the tortilla wedges on a baking sheet and bake for 8-10 minutes until crispy.
  4. While the tortillas bake, whisk the eggs and prepare the other ingredients.
  5. Melt the butter in a skillet over medium heat and scramble the eggs until about 60% set.
  6. Season the eggs with salt and pepper, then add the green chiles and sour cream.
  7. Fold in the baked tortilla chips and top with cheese.
  8. Transfer the skillet to the oven and bake for 5-8 minutes until the eggs are set and cheese is melted.
  9. Alternatively, cover the skillet and cook on the stove until set.
  10. Serve with sliced green onions on top.
