Instructions
- Preheat the oven to 400ºF.
- Cut the tortillas into wedges and coat them with cooking oil.
- Spread the tortilla wedges on a baking sheet and bake for 8-10 minutes until crispy.
- While the tortillas bake, whisk the eggs and prepare the other ingredients.
- Melt the butter in a skillet over medium heat and scramble the eggs until about 60% set.
- Season the eggs with salt and pepper, then add the green chiles and sour cream.
- Fold in the baked tortilla chips and top with cheese.
- Transfer the skillet to the oven and bake for 5-8 minutes until the eggs are set and cheese is melted.
- Alternatively, cover the skillet and cook on the stove until set.
- Serve with sliced green onions on top.
