Winter Citrus Salad with Persimmon & Rosemary

Ingredients

Syrup

  • ¼ cup maple syrup
  • 2 tablespoons water
  • 1 teaspoon ground cinnamon
  • 2 bags vanilla rooibos tea
  • 1 sprig fresh rosemary

Salad

  • 2 ripe persimmons, sliced
  • 1 large grapefruit, peeled and segmented
  • 2-3 pieces satsumas or clementines, peeled and segmented
  • 1 large pomelo, peeled and segmented
  • 2 bosc pears cored and sliced
  • ½ cup pomegranate seeds
  • 1 tablespoon lime juice
  • ¼ cup toasted pumpkin/sesame seeds
  • 1 sprig mint, leaves sliced fine

Instructions

  1. Combine all syrup ingredients in a small saucepan and bring to a simmer over medium heat.
  2. Once boiling, remove from heat and let steep for about 10 minutes.
  3. While the syrup is steeping, peel and chop all salad ingredients and place them in a large serving bowl.
  4. Toss the salad ingredients with lime juice.
  5. Strain the syrup over the bowl of fruit and toss everything together.
  6. Garnish the salad with reserved mint and seeds, then serve immediately.
