Winter Citrus Salad with Persimmon & Rosemary

persimmons, sliced

grapefruit, peeled and segmented

Instructions
- Combine all syrup ingredients in a small saucepan and bring to a simmer over medium heat.
- Once boiling, remove from heat and let steep for about 10 minutes.
- While the syrup is steeping, peel and chop all salad ingredients and place them in a large serving bowl.
- Toss the salad ingredients with lime juice.
- Strain the syrup over the bowl of fruit and toss everything together.
- Garnish the salad with reserved mint and seeds, then serve immediately.
