Jewel Winter Salad with Orange Vinaigrette

Ingredients

The salad

  • 6 cups assorted lettuce greens
  • 4 radishes, thinly sliced
  • 1 fresh Fuyu persimmon, thinly sliced
  • ½ cup pomegranate arils

Orange Vinaigrette

  • ½ medium orange
  • 1 tablespoon extra virgin olive oil
  • a pinch salt
  • a pinch black pepper

Instructions

  1. Combine lettuce greens, sliced radishes, sliced persimmon, and pomegranate arils in a medium salad bowl.
  2. For the vinaigrette, zest and juice the orange half, then mix the zest and juice with olive oil, salt, and pepper in a small dish.
  3. Whisk the vinaigrette ingredients together.
  4. Drizzle the vinaigrette over the salad and toss gently.
  5. Serve immediately.
