Ingredients

The dressing

  • 1 cup fresh or frozen cranberries
  • ¼ cup apple cider vinegar
  • 2 tbsp apple cider vinegar
  • ¼ cup pure maple syrup
  • tsp Dijon mustard
  • ½ cup fresh clementine or orange juice
  • 1 tbsp fresh clementine or orange juice
  • 2 tbsp extra virgin olive oil
  • ½ tsp kosher salt
  • to taste freshly ground black pepper

The salad

  • 1 large box organic mixed greens
  • 1 large apple, chopped
  • 1 large pear, chopped
  • ½ cup dried cranberries
  • ½ cup chopped walnuts, lightly toasted
  • ¼ cup pepita seeds (optional)

Instructions

  1. Cook cranberries, maple syrup, and vinegar in a pot over medium heat until the cranberries burst, about 7-10 minutes.
  2. Cool the cranberry mixture slightly, then blend it with the remaining dressing ingredients (except salt and pepper) until smooth.
  3. Add salt gradually to taste, blending again. Adjust other ingredients as needed.
  4. Chill the dressing in the fridge for a few hours.
  5. In a large salad bowl, combine the washed and dried greens with the chopped apple, pear, dried cranberries, and walnuts.
  6. Drizzle the salad with the chilled cranberry vinaigrette before serving.
