Instructions
- Prepare the apple cider dressing by combining garlic, olive oil, vinegar, honey, mustard, salt, and pepper in a jar and whisking or shaking well.
- Toast the pepitas in a skillet over medium heat until they pop and turn golden brown, then let them cool.
- In a large serving bowl, combine the mixed greens, chopped pears, dried cranberries, and toasted pepitas.
- Crumble the goat cheese over the salad.
- Drizzle the dressing over the salad and gently toss to combine.
