Ingredients

The salad

  • 5 ounces mixed baby greens
  • 1 large pear, chopped
  • cup dried cranberries
  • cup pepitas
  • 2 ounces chilled goat cheese

The dressing

  • 1 clove garlic, crushed
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons raw apple cider vinegar
  • 2 teaspoons raw honey
  • 1 teaspoon Dijon mustard
  • to taste salt and pepper

Instructions

  1. Prepare the apple cider dressing by combining garlic, olive oil, vinegar, honey, mustard, salt, and pepper in a jar and whisking or shaking well.
  2. Toast the pepitas in a skillet over medium heat until they pop and turn golden brown, then let them cool.
  3. In a large serving bowl, combine the mixed greens, chopped pears, dried cranberries, and toasted pepitas.
  4. Crumble the goat cheese over the salad.
  5. Drizzle the dressing over the salad and gently toss to combine.
  6. Serve immediately, optionally reserving some ingredients for garnish.
