The dressing

Instructions
- Toast the pepitas in a skillet over medium heat until golden and popping, then cool them in a bowl.
- Whisk together olive oil, vinegar, honey, mustard, and salt in a jar or cup, then season with pepper.
- Chop the apple into bite-sized pieces just before serving.
- In a large bowl, combine the greens, sliced apple, dried cranberries, and toasted pepitas.
- Crumble goat cheese over the salad and drizzle with dressing, then toss gently to combine.
