Ingredients

The salad

  • 5 ounces fresh spinach
  • 1 medium Gala or Honeycrisp apple, thinly sliced
  • cup thinly sliced red onion
  • 1 heaping cup candied pecans
  • 2 ounces crumbled goat cheese or ¼ cup shaved pecorino cheese
  • cup dried cranberries
  • to taste sea salt
  • to taste freshly ground black pepper

The dressing

  • to taste apple cider vinegar
  • to taste honey or maple syrup
  • to taste garlic
  • to taste Dijon mustard
  • to taste extra-virgin olive oil
  • to taste salt
  • to taste pepper

Instructions

  1. In a large bowl, combine the spinach, apple, and onion.
  2. Add some of the dressing and toss to combine.
  3. Gently toss in the pecans, goat cheese, and cranberries.
  4. Add more dressing as desired and season to taste before serving.
